Friday Favorites is another almost weekly feature here at Simply Living on a Budget. The whole point of this feature is to share some of my favorite finds. Anything is game. Food. Cleaning supplies. Kid stuff. Garden favorites. Recipes. Anything that I really like and want to randomly post about. Everything in Friday Favorites is something that I use and bought on my own.
Here is the simple, simple recipe from The Good Deal Gal!
Healthy Banana Oatmeal Cookies
- 3 ripe bananas
- 2 cups rolled oats
- 1 cup chopped dates or raisins
- 1/2 cup chopped walnuts
- 1/3 cup applesauce (no sugar added)
- 1/3 cup honey or agave nectar (I usually leave this out, so only add if you prefer a “sweet” taste) NOTE: If adding this, increase the oats by about 1/3 cup as well.
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Preheat oven to 325 degrees.
- In a large bowl, mash the bananas. Stir in oats, dates, nuts, applesauce, cinnamon and vanilla. Mix well, and allow to sit for 15 minutes. NOTE: The batter shouldn’t be too sticky – more like a reg. oatmeal cookie batter. Add a little more oats to make less sticky.
- Drop by teaspoonfuls onto an ungreased cookie sheet.
- Bake for 15-20 minutes in the preheated oven, or until lightly brown. Makes approx. 3 dozen.
It could not be any easier. And, now you don’t have to feel bad for eating 15 cookies. 😉
I admit mine don’t look like that picture. I had mine in little ball shapes and they stayed in that shape. I honestly forgot about the banana part of the cookies (short term memory issues, much?) until I took a bit of them. I was surprised by that part of that cookie. Oh and used pecans instead of walnuts as I have a mild walnut allergy and don’t keep them around the house much. With that trade out, I had everything in the kitchen to make these without a trip to the store!
The verdict …
My husband is still deciding if he likes these cookies.
My girls don’t like them. =/ I think there is too much banana taste for them. I might try a little less banana next time.
Little Dude LOVES these cookies. He has been really picky about what he is eating lately as his mouth is really hurting thanks to these teeth that just won’t show up! He has had these for breakfast several days this past week and for snacks.
As for me … I am with my husband on still deciding on these cookies. The banana flavor is a little strong for my liking.
All that being said, I will make them again so I can try to tweak them for my family and knowing that my Little Dude could probably live off them!
