Cooking doesn’t have to be complicated to be impressive; simplifying the process with fewer ingredients saves time, frustration, and ultimately, money. From breakfast treats like Brioche French Toast with Strawberries and Cream to no-fuss meals like Grown-up Grilled Cheese and Iceberg Wedges with Buttermilk Dressing to a romantic dinner of Grilled Scallops with Saffron Aioli and Green Goddess Rice, all of Robinson’s recipes have five or fewer ingredients. A quick trip to the supermarket for one bag of groceries, and a delicious, restaurant-quality meal can be on the table in no time.
My Thoughts …
My challenge is that the five ingredients for these recipes don’t include some of the staples to the recipes (salt, pepper, etc). I know this is standard in ingredient counting recipes/books but it still confuses me to be honest.
We had a chance to try a few of these recipes out! The Buttermilk Pecan Chicken (on page 90) paired with the Cheesy Penne (on page 186) was a favorite by everyone in our family. I really do like how simple these recipes are too. Here is the dish we had for dinner one night …
4 – 8 ounce skinless, boneless chicken breasts
1 cup of buttermilk
1 cup of toasted pecans
1 cup of panko
1/3 cup of vegetable oil
Kosher salt and freshly ground black pepper, to taste
Place each chicken breast between to piece of plastic wrap and gently flatten it with a meat mallet or heavy, flat object to an even 1/3 inch thick.
Marinate the chicken in buttermilk for 1 hour in refrigerator.
In a food processor, pulse the pecans and panko together until fine. Transfer mixture to a large rimmed dish.
Remove the marinated chicken breasts from the buttermilk and shake off any excess. Dip the chicken in the breading mixture, evenly coating both sides.
In a large nonstick skillet, heat the oil. Working in two batches, add the breaded chicken breasts and shallow fry 4 to 5 minutes on each side until golden in color. Remove them from oil and drain on a paper towel-lined plate; season with salt and pepper immediately and serve.
1 pound fresh or dried penne pasta
1/2 cup whole milk
2 teaspoons Dijon mustard
3/4 cup heavy cream
4 ounces aged English white cheddar cheese, grated
Kosher salt and freshly cracked black pepper, to taste
Bring a large saucepan of salted water to boil over high heat. Add the pasta; cook until al dente, according to package instructions, and drain. Return the pasta to the saucepan.
Whisk the milk with the Dijon mustard in a small bowl and add to the pot with cooked pasta, along with the cream and grated cheddar. Stir over medium-low heat until the cheese melts and the mixture is nice and thick. Season with salt and pepper and sever immediately.
Doesn’t that make you hungry?! Sorry for that but I hope it shows you how great this book is.
